Tara Gum
Explanation
Tara gum is a natural additive, obtained by grinding the endosperm of the seed of Caesalpinia spinosa. Tara gum is also called Peruvian carob that is a white to yellowish nearly odorless powder. The main components are mannose and galactose. The most part of the gum dissolves in cold water and completely dissolves in water above 80°C. The solution is resistant to acids, heat and salt.
