Locust Bean Gum
Explanation
Locust bean gum is a galactomannan vegetable gum extracted from the seeds of the carob tree which grows in the Mediterranean region. The major components of the gum are mannose and galactose. The gum dissolves partially in cold water, but completely dissolves in the water above 70°C. Locust bean gum is used as viscosity agent and gelling agent.
Using with other gums, it creates a synergy effect.

ice creams, frozen food, sausages, dairy, breads, biscuits, cakes, glazing, mayonnaise, dressings, sauces etc.
