Gellan Gum
Explanation
Gellan gum is a polysaccharide manufactured by microbial fermentation. It is an odorless powder of gray-white color. It is soluble in water but insoluble in ethanol. To completely dissolve the gum in water, it has to be heated to above 90°C.
The solution forms colorless and transparent gels that is resistant to heat, acid and enzyme.

jam, jellies, beverages, dairy, films etc.
