Explanation

Pectin is polysaccharide existing in cell membranes or thin layers between membranes of vegetables, and obtained mainly from peels of apples or citrus fruits. Pectin is classified HM and LM pectin depending on the content of esterized methyl group, and amide pectin which contains amine functional group. The characteristic of pectin is the formation of gels depending on pH, soluble solid (SS) and calcium salt.
