Sodium Alginate
Explanation
Sodium alginate is extracted from brown algae such as sea trumpet, seaweed and kombu. Sodium alginate is hydrophilic poly-electrolytes.
It dissolves in water, but insoluble in organic solvents. Sodium alginate is used as viscosity agent utilizing high viscosity properties and also used as gelling agent.
Applications
breads, jams, ketchup, sauces, ice creams etc.
